Thai Curry in A Hurry

This is a great quick dinner we really love it almost like a soup and very comforting, if you want to add a starch some good rice is always great don’t forget a wedge of lime on the side

Ingredients:


Green curry


Paste

22g green chilli

22g red onion

12g turmeric fresh is best

12g ginger

12g garlic

6g green chilli more if you like it spicy

2 tablespoons oil I love coconut oil for this.


Sauce

1 can coconut milk

2 chicken breast sliced

8 mushrooms sliced thin

2 bok Choi sliced into 4

Green onions cut long


Garnish

Picked basil

Picked coriander

Sliced green chili if going for spicy.


Method:

1. Blend all ingredients for the paste.

2. ⁠add paste to a pan, add coconut milk, chicken, green onions and cook on a low heat for 4-6 mins to gently poach the chicken.

3. ⁠remove from the heat add the mushrooms, bok Choi, season with salt and sugar place a lid and cook for a further 8 mins

4. ⁠to serve finish with fresh basil and coriander.
