This so nod to the GM egg in a basket have fun with great one for the kids and the adults with the addition of mushrooms enjoy this one tag me if you give it a go.
Ingredients:
2 eggs
1 slice bread
1 pkt shimjei mushrooms
1/4 bun parsley
2 garlic cloves
100ml olive oil
20g butter
Method:
1. Cut a hole in your thick sliced bread.
2. melt butter in a pan and add bread crack two eggs into the hole and slowly cook.
3. roast the bread well on both sides season and rest.
4. using the same pan add the mushrooms and olive oil and sauté until mushrooms are tender
5. add herbs and garlic and plate over the bread
