Mac & Cheesy

Ingredients: Bechamel

60g butter

45g flour

500ml milk

1 white onion

1 Teaspoon pepper corns


100g manchego

100g parmesan

100g mozzarella

3 small buffalo mozzarella

Mix altogether and save 75g for topping

150g dried mancheeroni

Method:

  1. Start with the milk add the onion peppercorns and cook until the onions are tender.

  2. Melt butter in a pan and add flour cook for 2 mins u til the mixtures turns light blond.

  3. Slowly add milk with a strainer and mix little at a time this will give you a silky texture

  4. Add all cheese and a spoon of mustard and set aside.

  5. Cook pasta for 7 mins strain and mix with sauce and 2 spoons pasta water.

  6. Place inside serving dish and top with remaining cheese, top with buffalo mozzarella and grill on high heat until golden and delicious.

    I love this dish as a great mid week dinner sauce can be made before and it’s a quick pasta cook and your ready, enjoy this one let me know what your favorite comfort food is and maybe I’ll cook my version.
