Fluffy Loaf of Bread

Good to have you here :)
So, I love baking bread and sometimes all one wants is a a good old sandwich - so I got you covered :)
This loaf of bread is excellent for sandwiches.

Fully Loaf
(Makes 2 loaves)
Ingredients:
1kg flour
70g sugar
600ml of water
14g fast active dry yeast
30g salt
Method:
1. In a bowl mix water and yeast together with sugar and leave to stand for 10mins
2. Add flour and Mix first on a very low speed and let it rest for 15 mins then mix again on high speed for 2 mins (to build the gluten), 2 more times with a resting period of 15 mins between each one.
3. allow bread to proof for another hour until 1.5 times bigger.
4. puck into 390g pieces and allow to proof
5. roll out the puck to along strip fold the edges in and roll.
6. place inside a greased bread pan and repeat with two more pucks cover and allow to rise u til just over the top.
7. brush with egg and bake at 180c for 35-40 mins:
8. remove from the oven and cool on a wire rack
